Relax……You got this!

Ho Ho Holy Moley the Christmas Season is upon us already!  Our elves are working so hard in the kitchen cooking up lunches and dinners to our customers!  I want to thank those who have chosen Great Circle to cater to their events! 

If you are like me you like to gather friends and family close to you during this holiday.  My advice to you is “KISS”.  “Keep It Simple Stupid” with these 5 easy steps:

  1. Send out a Holiday evite electronically:   They can be sent out via E-Mail or you can share them on Facebook.  Some are free online like or   Be sure to include all the pertinent info like date, time, place and be sure to ask for an RSVP so you know how many guests are coming.  Chose your evite card carefully as it will set the tone for the party.    
  2. Host a “Sample Party”:  This year you might consider hosting a “Sample Party“,  where you ask some of your guests to bring their favorite appetizer and others their favorite dessert, right from their own personal recipe box.  Everyone seems to have a traditional dish that their family makes for the holidays.  Why not share the love?  To add to the fun, you could leave out blank recipe cards and those who want to can write down their favorite recipe(s) from the evening.   You could also ask your guest to vote on the top app & dessert dish and provide the winners with a special prize.  It could be as simple as a pair of Christmas oven mitts or a Chocolate Santa.
  3.  Holiday Signature Cocktail: To continue with the “easy” theme, think about serving your own Holiday Signature Cocktail.  You could prepare it the day before and serve it in a big punch bowl or some pretty pitchers.  You could have one pitcher without alcohol for the kiddos and add your favorite spirit to the other.  I find lots of different recipes on Pinterest!   
  4. DecorDecorate to match the theme/atmosphere your trying to create for your party.   Candles go a long way in setting the mood and white lights create an elegant and warm feel.  This, with a few colorful cocktail napkins, is all you might need for decor for a party like this.
  5. Party Favors:  Now he is where you can shine.  Sending your guests home with a little token of your appreciation is key.   I might suggest a recipe box personalized with their name on it and maybe a few treats inside.  I’m pretty sure you can find these at your local Dollar Store and maybe even some things to “BeDazzle” them with.  This will send them home with something they can keep the recipes from your party in.  It’s personal and something they can use every Christmas when they are looking for that “something different” to make.  It’s a nice way to commemorate the occasion.

Creating meaningful memories doesn’t have to drain your energy or your wallet. Save time and money with these easy 5 steps and enjoy the holiday with friends and family!

What are YOU thankful for?


Sometimes in life we find we may feel it’s just easier to focus on the things we don’t have instead of the things we do have and for some, it’s hard to turn that around.  Since Thanksgiving is right around the corner, I thought I’d put out a blog focusing on the positive and jotting down just 10 things that I am thankful for in hopes that others will read it, share it and post 10 thinks that they are thankful for.

I got this idea from Oprah who jotted down 100 different things she was thankful for and posted it to Positively Present, a blog written by Dani DiPirro.  DiPirro blogs about supporting the idea that life is best lived if it’s lived right now with a positive attitude “Be positive. Be present. This is your life.”

10 Random things that I am thankful for:

  1. Life:  SO happy to be alive.  Very thankful for that!
  2. My family:  Love my family, love my husband, love my husband’s family, love my friends whom I consider family, and I love my work family.
  3. Health:  Although I’m not in perfect health, I am healthier than some.
  4. Chocolate:  Could have an impact on the above but I can’t help it!
  5. Wine:  While we’re talking vices…..Thank you Kendall Jackson!
  6. Snow days:  When work is cancelled and you can stay in your pajamas all day.
  7. Sunny days: At the beach or at work, I’m thankful for warm beautiful sunny days.
  8. My car: that gets me where I want to go when I want to get there.
  9. My dog:  She may bark a lot…..A LOT…..and not 100% housebroken yet but I am thankful that she is always so happy to see me at the end of the day.
  10. I love that I live in New England and have 4 beautiful seasons to look forward to.

As I am typing, I’m realizing how I could go on and on writing about things that I am thankful for.  It was actually hard to choose only 10.  I’m sure I left out many things that should be on this list but know that just because they aren’t listed, doesn’t mean that I am not thankful for them.

So now it’s your turn.  Can you list 10 things that you are thankful for in the comment section or on Facebook or just for yourself.  It really does put things in perspective and reminds you what is important in life.  Although my bank account doesn’t reflect it in any way, I am a very rich person in every way that counts.

The Little Company That Could….

GCC Fleet 10To quote Kaitlyn Wharf, our Events Coordinator/Account Manager Extraordinaire…….and she is right.  Our phones have not stopped and it’s only Tuesday!  “Can you prepare lunch for 40 ppl tomorrow?”  “Yes we can.”  “How about set up a hot meal for 50 at another company at the same time”?  “Love to!”  “And can you please prepare and serve lunch for 3 other companies, prep and shop for ingredients for tomorrow, take a Serve Safe Class and box up dry packs for all orders?”  “Why yes…..yes we can!”

It’s 9AM on Tuesday and our breakfast deliveries have gone out so we call this time the calming before the storm…..and Oh how we love to deliver in the rain!  But we LOVE the job!  The hustle and bustle of it all when everything has to go out at the same time to different jobs in different cars with different drivers.  The best part of it all is when we come back to the office and all is calm again and assure Mike that all of our customers are happy!

I’ve said it before and I’ll say it again.  “We LOVE What We Do & It Shows!”  Hard working, dedicated, proud employees all with the same mentality and working towards the same goal!  To make this company great-er!  Yup, a little bias on my part.GCC Fleet 8

What a week!

20181021_133333TGIF said NO ONE in the restaurant industry……….harrumph!  But what a week we had here at GCC!  It started on Sunday with our very first maiden voyage in our brand spanking new food truck!  The Daily Press!~  It was a great day.  And cold.  Did I mention cold?!  Mary and Bonnie set off like champs!  It was like they had been doing this all their lives!  Kait was the “Hostess with the Mostest” in front of the truck greeting and thanking everyone for their business.  Our customers had many trucks to chose from and it meant a lot that they picked ours as one of their choices.  We served our AWARD WINNING Grilled Reuben Egg Rolls & Bacon Pork Belly Egg Rolls.  We also served our new Buffa-O’s which were a huge hit!  These are big onion rings dipped in Buffalo Sauce and drizzled with blue cheese crumbles.  Man, those were good!  Our last item was a Stromboli Grilled Panini that rocked everyone’s world!  It was filled with italian cold cuts, carmalized onions, mushrooms, black olives and cheese served hot off the panini press!  What was I doing on the truck you ask?  Taste tasting?  Getting in the way a little bit…..but I had to be there to witness such a first for us!  Now that we got our first trial run out of the way, it’s off to the Navy Ship Yard on Monday!  We will be serving those fine folks breakfast lunch and dinner all winter.  Bring it on!  We are psyched!  We LOVE what we do!  Does it show!?  I think it does!

Speaking of Breakfast, Lunch & Dinner.  Aside from all of our customer deliveries this week, and there were many, we managed to fill a last minute order for our troops.  189 men and women were stranded in the airport here at Pease and we were able to feed them 3 meals on Wednesday and breakfast before they took off on Thursday morning.  You got to love those Pease Greeters who welcome our troops with open arms and take care of them like they were their own family.  They jump right in line with us and help serve, clean up, set up, whatever it is we or they need, they are there.  The Greeters are special people!  If you have never been to the airport to participate in a ceremony, I highly recommend it.  It’s humbling really.  It means so much to the men and women who are getting off that plane in a foreign place.  If you want to help, The Greeters depend on donations of water, candy, stuffed animals (for their kids), blankets, snacks, etc.    They have welcomed over 1500 flights and greeted over 590,000 troops since 2005.

Well it’s Friday and I am lucky enough to be going home now so I will say goodbye.  Until my next blog!  To quote Ellen, “Be kind to one another!”  and have a great weekend!

“We Love What We Do and it Shows”

First blog ever people!  Here we go……

What can I tell you about this job…….It’s busy.  We’re always running around doing something or going somewhere.  We make people happy with food!  Really good food too, and I’m not just saying that because I work here.  Our tag line is, “We love what we do and it shows“.  It doesn’t get any more accurate than that.  This is a happy place!  I feel like our employees really like to come here.   Great Circle Catering has been around for over 8 years now and we are growing fast.  We are located on Pease AFB in Portsmouth NH.  and cater everything from Corporate Breakfasts/Lunches, Weddings, Rehearsal Dinners,  Bar Mitzvahs,  Birthdays, Baby Showers, Marketing Events,  Graduations,  Personal Bar Services, Anniversaries, Fund Raisers, Employee Appreciation, etc….I could go on and on…  People can always find an excuse to get together and we are right here to feed them!

The GM, Mike Murphy, is a great guy and treats people with respect and I really think that trickles down the food chain…..did you see what I did there?  He likes his job, knows everything about food and works really hard so we happily follow his lead.  Kaitlyn Wharf is our Events Coordinator and she is amazing at her job!  She always finds a way to go above and beyond for our customers.  From something simple like a candle to something more like Flowers & Champagne, she always strives to throw in something a little extra to make the event more special.  Our customers really appreciate that and so do we.  Another member of our team is Linda Cirinna, who is our Accountant but is also a great food tester for new menu items and can help pull together a function if she is needed.   Our kitchen staff is beyond talented!  James, Mary and Abdul are true rock stars in the kitchen.  The knowledge, talent and finesse that is that team makes the food that comes out of our kitchen fit for a King!  Too much?  OK, they rock!  We love them!

And then there’s me……Sally McCaffrey.   I am the Sales part of this team and I work hard to get our name recognized using social media, face to face meetings, social networking clubs and now……BLOGGING!    And if you are reading this, you are looking at our brand new website!  Yaaaaaaaaay!  I hope you like it!

As I mentioned, we are growing fast that we just hired 6 more employees to join this team and we are SO HAPPY to have them!

Well, that’s all for now, just a general overview of what we do and who we are.  I will try and blog once or twice a week and keep you abreast of the goings on here at GCC!  I hope you’ll follow me!  Any and all feedback is greatly welcomed!
